Honey BBQ Sriracha Ribs

Ingredients You'll Need

  • 2 Racks of Baby Back Ribs
  • 1/2 Cup Brown Sugar, packed
  • 1 1/2 tsp. smoked paprika
  • 1 tbsp. salt
  • 1 1/2 tbsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1 bottle of Meridian Chicken & Rib BBQ Sauce
  • 3 tbsp. Sriracha
  • 1 Tbsp. Honey

Directions

  1. Preheat oven to 325F
  2. Dry the ribs with paper towels
  3. In a bowl, combine all ingredients except for ribs, BBQ sauce, honey & Sriracha
  4. Press the dry rub onto both sides of the ribs
  5. Tightly wrap each rack in foil and place into a single layer on a baking sheet
  6. Bake ribs for 2.5 hours
  7. Let ribs cool, remove foil and drain juices
  8. In a large bowl, combine BBQ sauce, sriracha and honey
  9. Brush ribs generously with Honey Sriracha Mixture
  10. Place on a heated grill for 5-10 minutes per side (should be fork tender)
  11. Use a sharp knife to carefully slice the ribs so that they don't fall apart

  • 36 Strips of Meridian Double Smoked Bacon
  • 2 tbsp. brown sugar
  • 4 ounces bittersweet or dark chocolate, chopped
  • 1/4 cup finely chopped pistachios, almonds or cashews

Directions

  1. Preheat oven to 375 degrees F
  2. Line 2 baking sheets with parchment paper
  3. Arrange bacon slices on baking sheets and sprinkle with brown sugar
  4. Bake for 20-25 minutes or until bacon is crisp
  5. Transfer to wire racks and let cool
  6. Line a baking sheet with wax paper
  7. In a saucepan over low heat, stir in chocolate until melted and smooth
  8. Dip bacon pieces halfway into chocolate, letting excess drip off
  9. Place on the prepared baking sheet
  10. While still warm, sprinkle with nuts and chill until chocolate is set

  1. Preheat oven to 375 F
  2. Scoop 1 ounce portion of stuffing and roll into a ball
  3. Repeat with remaining stuffing until 16 balls are made
  4. Wrap a piece of bacon around each stuffing ball and place on a parchment lined baking sheet, seam side down
  5. Place in an oven and bake for 30 minutes, turning the stuffing bites over halfway though so that bacon is fully cooked
  6. Remove from oven and serve warm

  • 8 Slices Meridian Smokehouse Bacon
  • 16 dates
  • 4 ounces of goat cheese
  • Toothpicks

Directions

  1. Preheat oven to 350 degrees F
  2. Slice the dates lengthwise on one side to create an opening and remove the pit
  3. Stuff a small amount of goat cheese into the cavity of each date and press the sides together to close
  4. Cut the bacon slices in half and wrap each date with a slice of bacon, securing with a toothpick
  5. Arrange evenly on a baking sheet and bake for 10 minutes
  6. Remove the dates and use the toothpick to turn each one so it's laying on its side
  7. Bake for another 5-8 minutes, until browned to your liking, and turn the dates on the other side and repeat
  8. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving

Directions

  2. Spray a baking dish with nonstick spray, set aside
  3. Boil a pot of water and cook gnocchi according to package instructions
  4. Drain and arrange in a single layer at the bottom of the baking dish
  5. In a saucepan over medium heat, melt the butter
  6. Stir in garlic and cook until lightly golden, about 1 minute
  7. Whisk in flour until mixture thickens
  8. Add the milk and whisk until the sauce thickens, about 3 minutes

  • 1 Meridian Boneless Pork Roast (about 4 Pounds)
  • 1 Cup Applesauce
  • 1/3 Cup Packed Brown Sugar
  • 2 Tsp. Vinegar

  • 1/8 Tsp. Ground Cloves
  • 1 Tbsp. Flour
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Sugar
  • 1/8 Tsp. Garlic Powder
  • 1/8 Tsp. Ground Black Pepper

Directions

  1. Heat oven to 350 degrees F
  2. Stir together applesauce, brown sugar, vinegar, mustard and cloves in small bowl; refrigerate half of the applesauce mixture and set aside remaining applesauce mixture
  3. Combine flour, salt, sugar, garlic powder and pepper in another small bowl
  4. Rub flour mixture evenly over entire surface of pork
  5. Place pork on rack in shallow roasting pan
  6. Roast, uncovered, until internal temperature is 140 degrees F
  7. Spoon reserved applesauce mixture over roast
  8. Roast until internal temperature is 155 degrees F., 1 to 1 1/2 hours total cooking time (about 18-20 minutes per pound)
  9. Transfer roast to serving platter; cover with foil and let stand for 15 minutes before slicing
  10. Heat chilled applesauce mixture in small saucepan until boiling; boil for 1 minute
  11. Spoon heated applesauce mixture over pork slices

Slow Cooked Baby Back Ribs

  • 6 Pounds Meridian Pork Baby Back Ribs
  • 3 Cups Meridian Chicken & Rib Sauce
  • 3 Tbsp. Paprika
  • 2 Tbsp. Brown Sugar
  • 1/2 Tsp. Cayenne Pepper
  • Salt and Pepper, to taste

Directions

  1. Mix the paprika, sugar, cayenne, salt, and pepper together to make a rub and rub this mixture all over the racks
  2. Place the ribs meat side out into the slow cooker standing up
  3. The ribs should curve along the wall of the slow cooker and the remaining rack should be stacked against the others
  4. Pour the 2 cups of chicken and rib sauce over the ribs
  5. Cover the slow cooker and cook on low for six to eight hours
  6. Once the ribs are done cooking, remove them from the slow cooker and let them rest while being tented in foil
  7. Remove the slow cooker insert and let it cool down
  8. Skim the fat from the top of the BBQ sauce and juices
  9. Pour the sauce into a sauce pan and allow to simmer until it reduces (approximately 20 minutes)
  10. Line a sheet pan with foil and a cooling rack that has been sprayed with non-stick spray oil
  11. Place an oven rack approximately 10 inches below the broiler and set the oven on broil
  12. Place the rib racks, bone side up on the sheet pan and rack and brush with the BBQ sauce that has reduced
  13. Broil the ribs for approximately 5 minutes
  14. Turn the ribs over and brush with more BBQ sauce, and then broil for another 10 minutes
  15. Remove cooked ribs from the oven and place the ribs on a cutting board and tent them with tin foil and allow them to rest for 1o minutes
  16. Cut the ribs individually and serve with any remaining BBQ sauce

  • 1 Meridian 4½ to 5lb bone-in pork shoulder
  • 2 medium yellow onions, thinly sliced
  • 4 medium garlic cloves, thinly sliced
  • 1 cup chicken stock
  • 1 Tbsp packed brown sugar
  • 1 Tbsp chili powder
  • 1 Tbsp kosher salt, plus more as needed
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon

Directions

  1. Place onions & garlic in an even layer in the slow cooker and pour in the chicken broth.
  2. In a small bowl, combine sugar, chili powder, salt, cumin, and cinnamon.
  3. Pat pork dry with paper towels and rub spice mixture all over the pork.
  4. Place meat on top of the onions & garlic.
  5. Cover and cook for 6-8 hours on high (until pork is fork tender).
  6. Pour the onion mixture from the slow cooker through a strainer and return the solids to the slow cooker.
  7. Remove bone from pork and discard.
  8. Using 2 forks, shred meat into bite-sized pieces.
  9. Return the shredded meat to the slow cooker, add BBQ sauce and mix to combine.
  10. Taste and season with salt as needed.

  • 1 Pound Meridian Double Smoked Bacon
  • 1 Pork Tenderloin (or pork loin roast)
  • 1 Ripe Pineapple
  • Meridian Pork Rub
  • 1 Tbsp. Cooking Oil

Directions

  1. Peel your pineapple and cut in half so that you have two equal pineapple rounds
  2. Core both sides of the pineapple, being careful not to break the pineapple
  3. Mix the pork rub with olive oil and rub onto pork tenderloin
  4. Stuff the pork tenderloin into the pineapple (you may have to cut the pieces to fit them inside)
  5. Wrap bacon around the outside of the pineapple, securing in place with toothpicks
  6. Grill, smoke or bake your bacon wrapped, pork stuffed pineapple until the internal temperature of the pork reaches 160F (71C)
  7. Allow swineapple to cool, then slice into rings & enjoy

  4. Spread ribs out evenly on the bottom of the pan
  5. Cover lightly with foil
  6. Bake at 325F for 3 hours, turning or stirring occasionally
  7. Finish the ribs under the broiler or transfer to a hot BBQ to caramlize the sauce
