Pork Tenderloin with Chimichurri Sauce 

4 servings
Prep time 15 minutes
Cook time 10 minutes 

2 1lb pieces of pork tenderloin
Meridian Mexican seasoning
Meridian Olive oil

Chimichurri Sauce
1 cup packed flat leaf parsley chopped
1/4 cup cilantro chopped
1 Tbls dried oregano
3 cloves garlic minced 
1/4 cup finely chopped red onion 
3 Tbls red wine vinegar
1/2 cup Meridian olive oil
salt & pepper to taste 
red pepper flakes to taste (we used 1 tsp)

Directions

1. Make chimichurri sauce and refrigerate for later.
2. Leave the pork tenderloin at room temperature for 30 minutes.
3. Brush all sides of pork with Meridian olive oil and season well with Meridian Mexican Seasoning.
4. Pre heat bbq to medium heat and place pork on grill. Flip pork after 3-4 minutes. Cook until the pork reaches a minimum temp of 145 degrees in the center, approx 10 minutes in total. 
5. Remove from the grill and let sit for 5 minutes before cutting into medallions.
6. Serve with the chimichurri sauce.

These bagels are easy to whip up and make a tasty breakfast, lunch or snack! 🥯 🥑 

Prep time 5 minutes
Cook time 5 minutes 
Serves 2

Ingredients: 

1 Meridian multigrain bagel

Recipe: Shrimp & Sage topped Ravioli
This dinner presents beautifully and tastes incredible. Can be served as a fun appy or delicious main dish. 

Serves 3-4 
Pre time 5 minutes
Cook time 15 minutes 

Ingredients 
1 package of Meridian Lemon Artichoke Pasta 
1/2 cup chicken stock 
1/4 cup apple cider vinegar (can also use dry white wine)
1 tsp corn starch
1/3 cup butter
2 Tbls fresh lemon juice 
1/4 cup mascarpone cheese
fresh black pepper

Garnish
20 Meridian shrimp
20 sage leaves 
2 Tbls Meridian olive oil (extra to drizzle at the end)
2 Tbls butter

Directions 

1. Cook pasta in salted water according to package directions. 
2. To make sauce - mix the corn starch with chicken stock.
3. Bring butter, vinegar, lemon juice and chicken stock to a low boil in a small saucepan and cook til it starts to thicken. Stir often. 
4. Add mascarpone cheese and simmer gently for 1 minute. 
5. Next cook shrimp by heating 2 Tbls Meridian olive oil in pan - add shrimp and cook 1-2 minutes per side til they are cooked through. Add butter to the pan to coat the shrimp. 
6. Remove shrimp from pan, add sage leaves and cook 1-2 minutes til they are crispy. 
7. Drain your pasta when it’s finished cooking.
8. On a plate arrange pasta and top each one with 2 prawns and 2 sage leaves. Drizzle sauce over top of shrimp then season with fresh pepper and a very light drizzle of Meridian olive oil. Enjoy!

It’s local peach season and these red haven peaches make the best dessert in just 10 minutes!

Ingredients
4 peaches
2 Tbls Meridian olive oil
1/4 cup butter melted
1 Tbls sugar
1/2 tsp cinnamon
1 cup blueberries
Meridian Honey
Fresh mint
 
Cooking Instructions:

Cut peaches in half and remove pit.
Brush peaches with olive oil to help prevent sticking to the grill.
Grill your peaches over medium high heat for approx 5 minutes per side, watch they don’t burn but they should have grill marks!
Remove from heat and then in a separate bowl mix your butter, sugar and cinnamon.
Put peaches in a bowl and drizzle with cinnamon butter.
Add ice cream and top with blueberries.
Drizzle honey over the top - add mint and serve!
