Coffee Rubbed Prime Rib Roast

Prime rib roast

 4 lbs Meridian Prime Rib Roast
 2 tbsp coffee grounds
 4 tbsp brown sugar
 2 tsp smoked paprika
 ¾ tsp ginger
 ¾ tsp chili powder
 ¼ tsp vanilla bean, seeds scraped
 1 tbsp black pepper
 2 tsp coarse salt
 1 onion, quartered
 2 garlic heads, tips cut off

Preheat oven to 450 F.

Combine coffee grounds, brown sugar, smoked paprika, chili powder, ginger, vanilla bean seeds, salt and pepper.

Rub coffee spice mixture all over the beef.

Add the garlic to the roasting pan and place beef on top.

Allow beef to come to room temperature.

Cook beef for 30 minutes, then reduce heat to 350 degrees.

Continue to roast until a meat thermometer inserted into meat registers 120 degrees for rare, 125 degrees for medium rare.

Allow to rest for 20 minutes.

Slice meat away from the ribs, cutting along the bones, then slice crosswise to your desired thickness.
