Ingredients You'll Need
- 4 lb. cleaned mussels
- 1 tbsp. olive oil
- 1 onion, sliced
- 3 garlic cloves, minced
- 2 sprigs fresh thyme
- pinch of red pepper flakes
- 1 cup dry white wine
- 1/2 cup low sodium chicken broth
- 1/2 cup flat leaf parsley, roughly chopped
- Crusty bread, for serving
Directions
- Heat oil in a large pot
- Add the onion, garlic, thyme and red pepper flakes for 3 minutes
- Add the mussels and toss to coat
- Add the wine and chicken broth and simmer, covered, for 3 minutes
- Toss with parsley and cook, covered until the mussels open
- Serve with crusty bread
