Shrimp ceviche

Ingredients You'll Need

  • 2 quarts water
  • 1/4 cup kosher salt
  • 1 lb. raw shrimp
  • Juice of 2 lemons
  • Juice of 2 limes
  • Juice of 2 oranges
  • 1 cup cucumber, peeled & diced
  • 1/2 cup red onion, finely chopped
  • 2 serrano chilies, seeded & chopped
  • 1 cup tomato, seeded & diced
  • 1 cup avocado, finely chopped
  • 1 tbsp. cilantro leaves, chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp. kosher salt

Directions

  1. Combine water and 1/4 cup salt in a large saucepan
  2. Bring to a boil over high heat
  3. Add shrimp and immediately turn off heat
  4. Let the shrimp sit until just cooked through, about 3 minutes
  5. Transfer to a cutting board until cool enough to handle
  6. Chop the shrimp into 1/2 inch pieces and place in a a medium bowl
  7. Add lemon, lime and orange juice
  8. Stir in cucumber onion and chilies
  9. Refrigerate for 1 hour
  10. Stir in tomatoes, avocado, chopped cilantro, oil and 1/4 tsp. salt into shrimp mixture
  11. Let stand at room temperature for 30 minutes before serving
  12. Garnish with cilantro
