A perfectly cooked New York Steak topped with a garlic herb butter.
Heat a large cast iron skillet over medium-high heat.
Add olive oil, butter, potatoes, garlic, thyme, rosemary and oregano. Cook for about 3 minutes, then stir and cook for 3 more minutes or until the potatoes are fork tender. Remove and set on a plate.
Turn skillet up to high heat and add the steaks. Cook on each side for 3 minutes or until the outside is browned.
Reduce heat to medium-high and cook the steaks almost to desired doneness.
Right before the steaks are done, make the garlic butter compound by mixing the butter, garlic, and chopped herbs. Spread on top of the steaks.
Add the potatoes back to the pan and heat through, letting the butter melt into the steaks.
