Herb Crusted Rack of Lamb

Elevate your rack of lamb with basil and garlic breadcrumbs.

 2 Meridian Free Range Racks of Lamb
 3 tbsp olive oil
 ¼ cup Dijon mustard
 ½ cup breadcrumbs
 2 cloves garlic, minced
 1 tbsp basil (chopped finely)

Preheat oven to 375F.

Add 1 Tbsp. olive oil to a skillet over medium-high heat.

Season the lamb with salt and pepper.

Brown the lamb in the skillet.

Remove from the pan and allow to rest.

Mix the breadcrumbs, garlic, basil and olive oil. Brush the lamb with Dijon mustard and then roll and pat in the breadcrumb mixture.

Place lamb racks into a roasting pan and place in the heated oven.

For medium-rare, roast to an internal temperature of 130F, approximately 20 to 30 minutes.

Remove from oven, allow meat to rest for 10 minutes and then serve.
