Ingredients You'll Need
- 1.5 lbs. fresh sockeye fillets, cut into 1 inch squares
- 16 Meridian Bamboo skewers
- 2 large lemons, thinly sliced
- 2 tbsp. parsley, freshly chopped
- 2 garlic cloves, minced
- 1/2 tsp. dijon mustard
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 2 tbsp. olive oil
- 2 tbsp. fresh lemon juice
Directions
- Soak bamboo skewers for at least 1 hour
- Preheat grill to medium heat
- In a medium bowl, stir together everything except salmon and lemon slices
- Double skewer the salmon and lemon slices onto 2 skewers at a time
- Brush both sides of the skewers with the marinade
- Oil the grates then place salmon on frill
- Grill kabobs for 4-5 minutes per side until salmon is completely cooked through
