Ingredients You'll Need
- 6 Russet Potatoes, cleaned and dried
- 8 Ounces Cheddar Cheese, Shredded
- 8 Slices Meridian Double Smoked Bacon, cooked & crumbled
- 1/4 Cup Unsalted Butter, melted
- Green Onion, Chopped
- Sour Cream, for topping
- Salt and Pepper, to taste
Directions
- Preheat oven to 400 degrees F
- Poke potatoes with a fork, place on baking sheet and cook for 1 hour
- Remove from baking sheet and allow to cool for 15 minutes
- Use a sharp knife to cut each potato lengthwise into three sections creating long slices
- Use a small spoon to scoop out 3/4 of the potatoes
- Turn your oven on broil
- Brush potatoes with butter on the inside and outside and place them back onto the baking sheet
- Season buttered potato skins with salt and pepper, place them in the oven and broil for 5-10 minutes, until insides are crispy
- Remove from the oven and add shredded cheese and bacon into each skin
- Place under the broiler and broil for 3-4 minutes or until cheese is melted
- Remove from oven and top with sour cream and green onions
