BBQ Rotisserie Chicken

Ingredients You'll Need

  • 1 Whole Chicken (around 4 lbs.)
  • 3/4 Cup Kosher Salt
  • 1/2 Cup Brown Sugar
  • 1 Small Red Onion
  • 4 Garlic Cloves
  • Fresh Ground Black Pepper
  • Meridian Chicken & Rib Sauce

Directions

  1. Rinse the chicken under cold water
  2. In a large pot, mix one gallon of cold water with 3/4 cup of salt and 1/2 cup of brown sugar, stirring until dissolved
  3. Place the chicken in the above brine and refrigerate for 4 to 6 hours
  4. Dice the onion, garlic, and cilantro and mix together
  5. Stick your fingers between the skin of the chicken and the breast meat to create an opening
  6. Stuff the onion garlic mixture beneath the skin and season chicken with salt and pepper
  7. Truss the chicken with cooking twine
  8. Remove the grill grates from the grill and place a shallow baking pan in their place
  9. Set the grill to medium-high and preheat to 375 F
  10. Clamp the chicken between the spit forks and turn on the rotisserie motor
  11. Using a basting brush, coat chicken with the BBQ sauce in 20 minute intervals during cooking
  12. Let the chicken cook until the thickest part of the thigh reaches 165 F
  13. Remove chicken from the grill and let rest before cutting
