Ingredients You'll Need
- 1 Whole Chicken (around 4 lbs.)
- 3/4 Cup Kosher Salt
- 1/2 Cup Brown Sugar
- 1 Small Red Onion
- 4 Garlic Cloves
- Fresh Ground Black Pepper
- Meridian Chicken & Rib Sauce
Directions
- Rinse the chicken under cold water
- In a large pot, mix one gallon of cold water with 3/4 cup of salt and 1/2 cup of brown sugar, stirring until dissolved
- Place the chicken in the above brine and refrigerate for 4 to 6 hours
- Dice the onion, garlic, and cilantro and mix together
- Stick your fingers between the skin of the chicken and the breast meat to create an opening
- Stuff the onion garlic mixture beneath the skin and season chicken with salt and pepper
- Truss the chicken with cooking twine
- Remove the grill grates from the grill and place a shallow baking pan in their place
- Set the grill to medium-high and preheat to 375 F
- Clamp the chicken between the spit forks and turn on the rotisserie motor
- Using a basting brush, coat chicken with the BBQ sauce in 20 minute intervals during cooking
- Let the chicken cook until the thickest part of the thigh reaches 165 F
- Remove chicken from the grill and let rest before cutting
