Ingredients You'll Need
- 1/4 cup & 1 tsp. cocoa
- 1 3/4 cup flour
- 1/2 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. cream of tartar
- 1/4 tsp. salt
- 1/3 cup butter
- 2 large eggs
- 2/3 cup sugar
- 1/2 tsp. vanilla
- 2 medium bananas, mashed
- 1 1/2 cup semi-sweet chocolate chips
Directions
- Preheat oven to 375 degrees
- Line a jumbo muffin tin with cupcake liners
- In a medium bowl, whisk the cocoa, flour, baking soda, baking powder, cream of tartar and salt
- In a large mixing bowl, beat the shortening, sugar, eggs, and vanilla until smooth
- Slowly add a little flour, banana and mix and continue to add flour and banana until all mixture is folded in and well mixed
- Add chocolate chips and mix well
- Spoon mixture into muffin tin (2/3 full)
- Bake for 25-30 minutes and allow to cool
