Ingredients You'll Need
- 2 lbs. Meridian Free Range Ground Beef
- 2 whole eggs
- 3 scallions, chopped
- 1 large yellow onion, chopped
- 3 garlic cloves, minced
- Handful of raw spinach
- 4 ounces goat cheese
- 2 Tbsp. tomato paste
- 2 tsp. cayenne pepper
- 1 tsp. oregano
- 2 tsp. salt
- 1 rosemary sprig
Directions
- Preheat oven to 425 degrees F
- Mix eggs and beef in a mixing bowl, then add scallions, garlic and onions and mix well
- Add cayenne, oregano and salt and mix well
- Lay some plastic wrap on the counter and then roll the meat on top of it
- Flatten it out and create a rectangle and then add spinach and goat cheese to the middle
- Using one side of the plastic wrap, flap one side into the middle, then do the same to the other side so it creates a roll
- Top the meatloaf with tomato paste and sprinkle with rosemary
- Cook for 50-60 minutes until internal temperature reaches 160F
- Cut into slices
