This fresh salad is the perfect summer side dish.
2 cups assorted heirloom tomatoes
1 ½ lbs assorted beefsteak tomatoes, cut into 6 wedges each
½ cup crumbled feta cheese
¼ cup thinly sliced fresh basil
3 tbsp chopped fresh flat-leaf parsley
2 tbsp chopped fresh mint
1 tbsp drained capers, chopped (optional)
1 tbsp balsamic vinegar
1 tbsp extra-virgin olive oil
½ tsp salt
½ tsp freshly ground black pepper & salt to taste
¼ cup peas
1 cucumber, seeded and chopped
½ cup cooked quinoa

Mix all your ingredients together.
