This homemade side dish is Dill-Ish!
Preheat oven to 400ºF.
Cut the potatoes into quarters.
Place potatoes in a bowl and coat with olive oil, lemon juice, then season with salt & pepper.
Line a baking sheet with parchment paper and lay potatoes in a single layer.
Bake potatoes for 25-30 minutes until they are fork-tender.
Once potatoes have cooked, allow them to cool for a few minutes.
Mix the mayonnaise, minced garlic, shallots, fresh dill, and salt & pepper to taste.
Add potatoes to a bowl with the mixed mayonnaise and dill. Mix until potatoes are thoroughly coated.
Garnish with fresh chives.
