Ingredients You'll Need
- 5 lbs. sweet potatoes, peeled & cut into 2 inch pieces
- 1 cup water
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup butter, melted
- 1 cup brown sugar
- 3 tsp. salt
- 1/2 cup heavy cream
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/2 cup melted butter
- 1 cup chopped pecans
- 4 cups mini marshmallows
Directions
- Boil sweet potatoes, then drain and mash
- Preheat oven to 375 F
- Add eggs, vanilla, 1/2 cup melted butter, 1 cup brown sugar, salt and cream to the sweet potatoes and mix until smooth
- Spread sweet potato mixture in the bottom of greased baking dish
- In another bowl, combine remaining brown sugar, flour, 1/2 cup melted butter and pecans and mix well
- Sprinkle sweet pecan mixture on top of the potatoes and bake uncovered for 15-20 minutes, until pecans are caramelized
- Spread marshmallow s evenly over pecan mixture
- Return to oven for another 5 minutes, or until marshmallows are puffy and lightly browned
