Ingredients You'll Need
- 1/2 lb. penne pasta (or your favourite varieties)
- 1 cup sun-dried tomatoes
- 1/4 cup extra virgin olive oil
- 1 cup fresh basil, plus more for garnish
- 4 garlic cloves, minced
- 2 tbsp. parmesan cheese
Directions
- Boil water, add salt and then pasta
- Cook to package instructions
- Add sliced sun-dried tomatoes, olive oil, basil, garlic, and parmesan cheese to a food processor or high speed blender
- Add cooked pasta (drained), back to the pot and add sundried tomato mixture
- Toss to coat and season with olive oil and parmesan
- Serve warm with additional fresh basil and parmesan cheese
- Store covered in the fridge for up to 2 days
