Stuffed mushroom caps

Ingredients You'll Need

  • 20 medium white mushrooms
  • 1 tbsp. unsalted butter
  • 2 tbsp. olive oil
  • 1/2 small green onion
  • 1/2 small green pepper
  • 1 garlic clove
  • 2 tbsp. fresh lemon juice
  • 1/4 cup flat-leaf parsley, chopped
  • 3/4 cup bread crumbs
  • 1/4 cup grated parmesan
  • 1/4 cup grated mozzarella

Directions

  1. Heat oven to 350 degrees F
  2. Separate stems from the mushroom caps
  3. Finely chop steps of mushroom caps
  4. Heat butter and 1 tbsp. oil in a large skillet over medium heat
  5. Add onion, green pepper, and black pepper and cover, cooking for 4 minutes (occasionally stirring)
  6. Remove from the heat and let cool for 5 minutes
  7. Stir in lemon juice, parsley, bread crumbs, and cheeses
  8. On a large rimmed baking sheet, toss the mushrooms in the remaining tbsp. oil and arrange stem side up
  9. Divide the bread crumb mixture among the caps
  10. Bake until mushrooms are golden brown and tender
