Ingredients You'll Need
- 1 1/2 lb. prawns, peeled & deveined
- 1/4 cup oil
- 1 cup onion, chopped
- 1 tbsp. garlic, minced
- 2 tbsp. ginger, minced
- 2 tbsp. ground coriander
- 1/4 tsp. ground cumin
- 1/4 tsp. ground cinnamon
- 1/8 tsp. cayenne pepper
- 1/8 tsp. turmeric
- 1 cup canned tomatoes, drained
- 2 1/2 cup coconut milk, unsweetened
- 1/2 cup water
- 1 tsp. salt
- 3/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Directions
- Heat oil in a large skillet over medium-high heat
- Add onions and cook, stirring occasionally for 3 minutes
- Add garlic and ginger and cook for 2 minutes
- Add coriander, cumin, cinnamon, cayenne, and tumeric and cook for 1 minute
- Add tomatoes and cook for 1 minute
- Add coconut milk, water and salt and bring to a simmer
- Cook for 5-10 minutes or until the sauce has thickened
- Add shrimp and simmer, stirring occasionally, for 5 minutes
- Stir in cilantro
- Serve with lime wedges
