One of the nicest things about cooking a roast on the ‘Q is that once you get it setup & running, you can sit & relax and drink a glass of lemonade.
Combine wine, oil, garlic & herbs
Place beef roast and onions in a large reusable bag
Pour marinade mixture over top and seal
Refrigerate marinated roast for 2 hours to overnight
Preheat grill on high heat
Place roast on rotisserie spit making sure to keep it balanced & securing tightly
Place roast on grill and reduce heat or move coals away from roast after 15 minutes
Continue cooking until done (around 1 hour 30 minutes)
Meanwhile, pour 2 cups of wine garlic herb marinade into a sauce pan and bring to a boil
Reduce heat to medium and simmer for 3-4 minutes, stirring often
Remove from heat and add butter
Baste roast with mixture every 30 minutes during cooking time
