Ingredients You'll Need
- 8 Meridian Free Range Lamb Loin Chops
- 3 Tbsp. Olive Oil, divided
- 1 Large Garlic Clove, minced
- 1/4 Cup Dried Porcini Mushrooms, finely chopped
- 1 Tbsp. Rosemary Leaves, finely chopped
- Sea Salt & Fresh Ground Pepper, to taste
Directions
- Combine 2 tablespoons oil and garlic in a bowl and smear over both sides of the lamb chops
- Sprinkle with salt and black pepper and refrigerate for 1-2 hours
- Combine mushrooms and rosemary in a small bowl
- Remove lamb from refrigerator and coat both sides of lamb chops with mushrooms
- Let sit at room temperature for 30 minutes
- Preheat oven to 375 F
- Heat 1 tablespoon oil in a large skillet and add lamb chops without overcrowding
- Cook until brown on both sides, turning once, 3-4 minutes per side
- Transfer skillet to oven and bake until cooked to desired doneness (10-15 minutes for medium-rare)
- Remove from oven, tent with foil and let rest for 15 minutes before serving
