Ingredients You'll Need
- 4 lbs. Beef Chuck Roast
- 1 cup beef broth
- 3 large bell peppers, sliced
- 2 medium onions, sliced
- 8 long sandwich rolls
- 16 slices Provolone cheese
- Salt & pepper to taste
Directions
- Rub beef with salt and pepper
- Add seasoned beef and beef broth to slow cooker
- Add peppers and onions on top of beef
- Replace lid and cook on low for 8 hours
- When ready to serve, place oven rack 5 inches from broiler and preheat broiler to high
- Transfer beef to a large cutting board and shred, discarding any fat
- Strain vegetables from cooking liquid
- Divide meat and vegetables among the sandwich rolls
- Top with cheese and place sandwiches on a foil lined baking sheet
- Broil for 2-3 minutes or until cheese melts
