Perfect Pot Roast

This recipe makes the perfect family meal. Pot Roast is like elegant, comfort food all in one meal!

Perfect pot roast recipe

 4 lbs Meridian Grass-Fed Chuck Roast
 2 tbsp Extra Virgin Olive Oil
 2 Whole Onions, quartered
 6 Whole Carrots, peeled and cut into 2" chunks
 3 Potatoes, cut into large chunks
 1 cup Red Wine (can substitute with apple juice)
 3 cups Beef Broth
 2 Fresh Thyme
 3 Fresh Rosemary
Gravy
 3 tbsp Corn Starch
 ½ cup Water

Preheat oven to 300 degrees F.

Salt and pepper the roast to your taste preference - we recommend seasoning the roast well or have it pre-seasoned at the store with our Meridian seasoning blend (which is perfect for pot roast!)

Add olive oil to pan and sear all sides of the roast until nicely browned (this step can be skipped but does give the roast a great flavour).

Add roast then all vegetables, broth and wine to large baking dish. Make sure roast is covered at least half with liquid. Add fresh herbs.

Put the lid on the baking dish roast for approx 3.5 hours until it is fall-apart tender.

When the roast is finished remove from oven and take out the vegetables and roast and place in the oven at 200 degrees F to keep warm.

Pour the remaining liquid in to a pot on the stove and bring to a boil over medium heat. Whisk together 1/2 cup water with corn starch stirring til smooth, add to boiling pot and cook until gravy has thickened, approx 5 minutes.

Serve hot gravy with the roast and vegetables.
