8 fresh, Free Range eggs
¼ cup milk
1 garlic clove, minced
¾ cup spinach, chopped
¾ cup tomatoes, chopped
¾ cup mozzarella cheese, shredded
salt & pepper, to taste

Preheat oven to 350F.

In a mixing bowl, combine the eggs, milk, and garlic. Mix to combine well.

Gently mix in the spinach, tomatoes, and mozzarella. Season with salt and pepper.

Generously spray a muffin tin with non-stick cooking spray.

Fill each muffin tin 2/3 full of the egg mixture.

Bake for 20-25 minutes, until eggs are fully cooked.
