Ingredients You'll Need
- 1 Meridian Free Range Rack of Lamb
- 1 Lemon
- 1 Lime
- 1 Large Garlic Clove
- 1/2 Tsp. Cumin Seeds
- 1/2 Tsp. Coriander Seeds
- 1/2 Tsp. Sea Salt
- 1/2 Tsp. Pepper Corns
Directions
- Use a mortar and pestle to grind the cumin, coriander and salt & pepper
- Juice and zest half of the lemon and half of lime and pour into mortar, stir these ingredients until thoroughly mixed
- Rub this marinade on the lamb rack and place in a bowl or container & cover with paper towel
- Leave the marinated lamb in the fridge for a minimum of two hours, and then bring to room temperature before cooking
- Start up your BBQ and put on high heat. Drizzle olive oil over the lamb and then place the lamb on the grill
- For a medium rare cook, cook the rack on each side for 7 minutes
- After this is done, turn the lamb over one final time to cook for another 5 minutes
- Let the lamb rest for 3-5 minutes before carving
