Ingredients You'll Need
- 2 Meridian Frenched Rack of Lamb
- 1/2 cup honey
- 1/2 cup cherry jam or jelly
- 1 tsp. fresh lime juice
- 2 tsp. olive oil
Directions
- Place lamb racks on a foil-lined baking sheet
- Drape a piece of aluminum foil over the bones to prevent browning
- In a small bowl, combine honey, jam, oil and lime juice
- Set aside 1/2 of the honey glaze mixture
- Spoon half of the remaining mixture over the lamb
- Broil for 10-12 minutes or until lamb reaches an internal temperature of 160 degrees F
- Remove lamb from oven and loosely cover with foil
- Let stand for 5 minutes before cutting
- Brush with reserved glaze
