Grilled Sweet Potatoes

Sweet potatoes grilled to tender perfection and drizzled with cilantro-lime dressing

 2 lbs Sweet Potatoes
 4 tbsp Olive Oil
 Kosher Salt
 ¼ cup finely chopped cilantro
 1 tsp lime zest
 2 tbsp fresh lime juice
 ¼ cup olive oil
 Pinch of salt

Heat grill for hot, indirect heat

Peel sweet potatoes and slice lengthwise into 1/4" thick pieces

Coat the sweet potato slices with olive oil and lightly sprinkle with kosher salt

In a small bowl, combine cilantro, lime zest, lime juice, 1/4 cup of olive oil and a pinch of salt

Once grill is hot, lay the sweet potato pieces down onto their grill grates

Cover the grill and cook until each side gets some grill marks (between 3-6 minute per side)

Toss the sweet potatoes in a bowl with the cilantro-lime dressing

It mentions indirect heat, does this mean you place pieces off flame?

Hi Pat! indirect heat is cooking on the cooler side of the grill. When the lid is on your grill and you place your food away from the heat source, the grill acts like an oven. It’s a great way to cook if your food has high sugar content, like sweet potatoes!
