Ingredients You'll Need
- 1 1/2 tsp. cooking oil
- 3 tbsp. green curry paste,
- 2 Meridian Free Run Chicken Breasts, cut into bite sized chunks
- 1/2 cup coconut milk
- 1/2 cup water
- 1/4 pound bamboo shoot
- 2 red chilies, cut into strips
- 1 tbsp. fish sauce
- 1 tbsp. sugar
- 1/4 cup basil leaves
Directions
- Heat a pot over medium heat and add cooking oil
- Saute the curry paste until fragrant
- Add chicken and stir to combine with curry paste
- Add coconut milk and water and bring to a boil
- Add bamboo shoots and red chilies
- Lower heat to simmer, cover the pot and let simmer for 10 minutes, until curry thickens
- Add fish sauce, sugar, and basil leaves
- Stir well to mix
- Turn off heat and serve with rice
