Easiest and most delicious roasted potatoes. Ever.
Preheat oven to 400 degrees F.
Cut potatoes in half or quarters if they are on the big side.
Place potatoes in bowl with olive oil, salt, pepper and garlic, mix until potatoes are well coated in the oil.
Dump potatoes onto a sheet pan and spread them out making sure they are not overlapping each other.
Roast in the oven for 40-45 minutes or until they have browned. Toss once during cooking to help ensure they roast evenly.
Remove potatoes from oven and toss with parsley, add salt and pepper to taste.
Sprinkle freshly chopped dill over potatoes and serve.
