Crockpot Chicken & Wild Rice Soup

Chicken wild rice soup

Ingredients You'll Need

  • 1 cup uncooked wild rice
  • 1 lb. Free Run Chicken Breasts
  • 2 cups chopped celery
  • 2 cups chopped carrots
  • 2 cups chopped onions
  • 6 cups chicken broth
  • 1 tsp. poultry seasoning
  • 1/2 cup butter
  • 3/4 cup flour
  • 2 cups whole milk
  • 2 cups milk

Directions

  1. Rinse the wild rice
  2. Place rice, chicken, vegetables, chicken broth and poultry seasoning in the crockpot
  3. Cover and cook on low for 7-8 hours (until chicken is cooked through and rice is soft)
  4. Remove chicken from crockpot and allow to cool slightly
  5. Using two forks, shred the chicken and return to the crockpot
  6. When rice and chicken are done cooking, melt butter in a saucepan
  7. Add flour and let the mixture bubble for 1 minute
  8. Slowly whisk in the whole milk until a thick, creamy mixture forms
  9. Add this to the rice and chicken in the crockpot and stir to combine
  10. Add extra water or milk to adjust the consistency to your liking
  11. Season with additional salt & pepper
