Coconut Milk Baked Chicken

Ingredients You'll Need

  • 1 Meridian Free Run Whole Frying Chicken, skin on, cut up
  • 6 tbsp. coconut milk
  • 2 tbsp. fresh lime juice
  • 2 tbsp. brown sugar
  • 3/4 tsp. ground ginger
  • 3/4 tsp. garlic powder
  • 1 tsp. dried basil
  • 1/2 tsp. salt
  • 1 tsp. fresh ground black pepper

Directions

  1. Whisk together all ingredients except chicken, until well combined
  2. Toss chicken in mixture until coated
  3. Place marinated chicken in a ziplock bag and refrigerate 1 hour to overnight (time permitting)
  4. Arrange chicken in oven-proof skillet or dutch oven
  5. Bake uncovered for 30 minutes, until chicken reaches internal temperature of 170 F
