Beet & Goat Cheese Salad

Beet salad
Yields4 Servings
Prep Time15 mins
 6 oz mixed greens
 1 15 oz can of whole beets
 1 large avocado
 1 tsp lemon juice
  cup toasted pistachios
 1 15 oz can of mandarin oranges
 crumbled goat cheese
 ¼ cup freshly squeeze orange juice
 2 tsp orange zest
 1 ½ tsp honey
 ½ tsp dijon mustard
 ¼ tsp salt
 ¼ tsp onion powder
  cup vegetable oil
 ½ tbsp poppy seeds

Place lettuce in a large bowl.

Remove the pit and peel of avocado, chop into pieces and toss with lemon juice.

Add to the lettuce bowl.

Drain the mandarin oranges and add those to the bowl.

Drain and rinse beets, and allow to dry.

Chop up the beets and add to the salad.

Combine orange juice, orange zest, honey, mustard, salt, onion powder and vegetable oil in a small blender and pulse.

Stir in poppyseeds.

Toss salad with dressing.

Top with pistachios and crumbled feta cheese.

I served this last night and it was amazing. I roasted fresh beets in the oven to use. (Cut off both ends of small sized beets, salt and pepper and wrapped in foil. Baked for 1 hour at 400 degrees. Unwrap and let cool a bit then rinse under water and slide skin off.)
My whole dinner consisted of recipes from Meridian Meats…Thank you .
