BBQ Bacon Chicken Bombs

Ingredients List & Amounts
 5 Meridian Free Run Boneless Skinless Chicken Breasts
 5 Jalapeños, de seeded & sliced in half lengthwise
 4 oz Cream Cheese, softened
 1 cup Cheddar Cheese, shredded
 20 slices Meridian Smokehouse Bacon
 1 cup Meridian Chicken & Rib BBQ Sauce
 Salt and Pepper to taste

Cut chicken breasts lengthwise into thin fillets

Pound the chicken fillets until they are 1/4" thick

Season chicken breasts with salt and pepper

In a mixing bowl, combine cream cheese & cheddar cheese until well blended

Fill each jalapeño half with 1 Tbsp. of cheese mixture

Place stuffed jalapeños (cheese side down), on the chicken fillets and roll chicken around jalapeños

Wrap 2 pieces of bacon tightly around the rolled chicken

Tuck bacon strips into each other to seal ends closed

Preheat grill to 350 F, and place chicken fillets on the grill to cook over indirect that for 25-30 minutes

Turn chicken bombs on the grill every 5 minutes to ensure even cooking

Baste chicken bombs with BBQ sauce each time you turn them

Just before chicken is finished cooking, baste with BBQ sauce one last time

When chicken is done cooking (meat thermometer reaches an internal temperature of 165F), remove from grill and allow to rest for 5 minutes before serving
