Turkey Barley Soup

Ingredients You'll Need

  • 12 cups turkey stock from the bones
  • 3 cups celery, chopped
  • 2 onions, chopped
  • 5 thyme sprigs
  • 8 carrots, shredded
  • 1 large potato, peeled & shredded
  • 2-4 cups turkey, cooked
  • 1 cup barley, rinsed
  • 1 tsp. salt
  • 1 tsp. pepper
  • fresh sage, chopped
  • fresh rosemary, chopped

Directions

  1. Add turkey stock, celery, onions and thyme to a large stock pot and bring to a boil
  2. Reduce to a simmer and cover for half and hour, or until celery is tender
  3. Use a food processor to shred carrots and potato
  4. Add carrots and potatos to the pot and bring to a boil
  5. Reduce to low heat and simmer, covered for half an hour
  6. Add turkey and the barley, bring to a boil, then reduce to medium-low allowing to simmer for 40-60 minutes or until barley is tender
  7. Season with salt and pepper
  8. Stir in chopped sage and rosemary

Ingredients You'll Need

  • 2 cups fully cooked turkey, diced
  • 2 cups mashed potatoes
  • 2 cups stuffing
  • 2 large eggs, lightly beaten
  • 2 tbsp. water
  • Flour
  • Panko breadcrumbs
  • Oil for frying
  • 2 garlic cloves, sliced thin

Directions

  1. Mix the mashed potatoes, stuffing and turkey in a large bowl
  2. In 3 separate bowls, place flour, lightly beaten eggs and water, and breadcrumbs
  3. Roll the potato, turkey, garlic and stuffing mix into 2-inch balls and coat each in flour ,egg and then breadcrumbs
  4. Place on a baking tray with enough space between them so they are not touching
  5. In a large skillet, place an inch of oil to fry the croquettes in batches
  6. Serve with reheated gravy or cranberry sauce

Ingredients You'll Need

  • 1 lb. Meridian Free Run Ground Turkey
  • 1 Tbsp. Olive Oil
  • 3/4 Cup Yellow Onion, chopped
  • 2 Garlic Cloves, minced
  • 1 Tbsp. Chili Powder
  • 1 Tsp. Ground Cumin
  • 1/2 Tsp. Paprika
  • 1/2 Cup Tomato Sauce
  • 1/2 Cup Low Sodium Chicken Broth
  • Romaine Lettuce
  • Cheese, Shredded (your choice of cheddar, mozarella or another shredded cheese)
  • Roma Tomatoes, diced
  • Red Onion, diced
  • Avocado, diced
  • Cilantro, chopped
  • Sour Cream
  • Salt & Fresh Ground Pepper

Directions

  1. Heat olive oil in a non-stick skillet over medium-high heat
  2. Add onion and saute for 2 minutes
  3. Add turkey and garlic to the skillet
  4. Season turkey with salt and pepper, and cook, tossing and breaking up turkey, until cooked through (about 5 minutes)
  5. Add chili powder, cumin, paprika, tomato sauce and chicken broth
  6. Reduce to a simmer and cook for 5 minutes, or until sauce has reduced
  7. Serve ground turkey mixture in lettuce leaves and top with tomatoes, cheese, onion, avocado, cilantro and sour cream

1 lb Meridian Free Run Ground Turkey
1 tbsp Extra Virgin Olive Oil
¾ cup Yellow Onion, chopped

1 tbsp Chili Powder
1 tsp Ground Cumin
½ tsp Paprika
½ cup Tomato Sauce
½ cup Low Sodium Chicken Broth
Romaine Lettuce
Cheese, shredded (your choice of cheddar, mozarella or another shredded cheese)
Roma Tomatoes, diced
1 Red Onion, diced
1 Avocado, diced
1 bunch of Cilantro, chopped
Sour Cream
Salt & Fresh Ground Pepper

Directions

Ingredients You'll Need

  • 1 Meridian Free Run Frying Chicken
  • 8 Ounces Goat Cheese, softened
  • 1/2 tsp. Fresh Basil, chopped finely
  • 1/2 tsp. Oregano
  • 1/2 Lemon
  • 1 Garlic Bulb, with the top cut off
  • 3-4 Tbsp. Olive OIl
  • Salt and Pepper to taste

Directions

  1. Preheat oven to 375 degrees F
  2. Pat chicken completely dry with paper towels
  3. In a bowl combine goat cheese, basil and oregano until well mixed
  4. Rub the chicken with olive oil and then sprinkle with salt and pepper
  5. Place the chicken into a roasting pan
  6. Lift the skin of the chicken above the breast and stuff with goat cheese mixture
  7. Press mixture into the thighs as far back as possible
  8. Rub the outside of the chicken with goat cheese to use up the rest of the mixture
  9. Stuff the garlic bulb, cloves facing inward in the top opening, and the lemon half into the bottom opening
  10. Roast for an hour and 15 minutes (or until internal temperature of 165 F)
  11. Allow to rest for 30 minutes before cutting
