Bacon Wrapped, Gruyere Topped Pork Medallions

Bacon wrapped pork

Ingredients You'll Need

  • 1 large pork tenderloin (or 2 small)
  • 4 slices Meridian thick cut bacon
  • 200 grams Gruyere cheese
  • 8 whole garlic cloves
  • salt and pepper

Directions

  1. Preheat oven to 400 F
  2. Slice tenderloin into 8 equal parts
  3. Wrap each medallion in bacon around the round part so that the sliced side remains exposed
  4. If needed, use butcher twine to hold bacon in place
  5. Salt and pepper each medallion then toss in the garlic cloves
  6. Place medallions, bacon side down in a greased cast iron pan and heat over medium heat
  7. Sear for 5 minutes, then turn 90 degrees to sear the next side of bacon
  8. Continue with this process until you sear the bacon completely
  9. Top with sliced Gruyere cheese
  10. Place pan in the oven and roast for 10-15 minutes or until internal temperature of pork is 160F
  11. Remove from oven and spoon juice and garlic over the medallions
  12. Allow to rest for five minutes before serving
