Ingredients You'll Need
- 1 large pork tenderloin (or 2 small)
- 4 slices Meridian thick cut bacon
- 200 grams Gruyere cheese
- 8 whole garlic cloves
- salt and pepper
Directions
- Preheat oven to 400 F
- Slice tenderloin into 8 equal parts
- Wrap each medallion in bacon around the round part so that the sliced side remains exposed
- If needed, use butcher twine to hold bacon in place
- Salt and pepper each medallion then toss in the garlic cloves
- Place medallions, bacon side down in a greased cast iron pan and heat over medium heat
- Sear for 5 minutes, then turn 90 degrees to sear the next side of bacon
- Continue with this process until you sear the bacon completely
- Top with sliced Gruyere cheese
- Place pan in the oven and roast for 10-15 minutes or until internal temperature of pork is 160F
- Remove from oven and spoon juice and garlic over the medallions
- Allow to rest for five minutes before serving
