Ingredients You'll Need
- 1 Meridian Free Run Whole Frying Chicken, skin on, cut up
- 6 tbsp. coconut milk
- 2 tbsp. fresh lime juice
- 2 tbsp. brown sugar
- 3/4 tsp. ground ginger
- 3/4 tsp. garlic powder
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1 tsp. fresh ground black pepper
Directions
- Whisk together all ingredients except chicken, until well combined
- Toss chicken in mixture until coated
- Place marinated chicken in a ziplock bag and refrigerate 1 hour to overnight (time permitting)
- Arrange chicken in oven-proof skillet or dutch oven
- Bake uncovered for 30 minutes, until chicken reaches internal temperature of 170 F
