Ingredients You'll Need
- 4 Meridian Free Run Boneless Skinless Chicken Breasts
- 1 Tbsp. Meridian Italian Rub
- 2 Tbsp. Cooking Oil
- 4 Slices Meridian Double Smoked Bacon
- 8 Ounces Cream Cheese, softened
- 1/4 Cup Green Onions, chopped finely
- Salt and Pepper, to taste
Directions
- Preheat oven to 375 degrees F (190C)
- Partially cook the slices of bacon in a frying pan (bacon will cook the remaining amount in the oven with the chicken)
- Cut the chicken breasts in half and then flatten the chicken by pounding them out to be about quarter of an inch thick
- Mix Italian Rub and Cooking oil, and rub on chicken breasts
- Mix the cream cheese, salt, pepper, and green onion together
- Spread 2 tablespoons of the cream cheese mixture onto each of the flattened chicken breasts.
- Roll up the chicken slices and wrap them each with one strip of bacon
- To keep the chicken wrapped tightly, secure with a toothpick
- Place a piece of parchment paper on a cookie sheet and then place the stuffed breasts on top
- Bake for 30 minutes and then broil the chicken breasts for 5 minutes for crispy bacon
