Wild BC Spot Prawn season only lasts for 4-6 weeks, beginning this Friday. They are known around the world for their sweet flavour and firm texture. Spot Prawns have a unique reddish brown colour that turns bright pink with white spots when cooked.

Beef or Salmon Wellingtons with Asparagus & Prawn Skewers and a delicious healthy strawberry salad! Recipes below ⬇️

Made locally by hand, enjoy our Meridian Wellingtons here for a limited time! Choose from either Beef or Salmon selections. Our Beef Wellingtons are made with local button & portobello mushrooms, and AAA beef. Salmon Wellingtons are made with sockeye salmon and a creamy mix of spinach, artichokes, cream and Parmesan cheese.

Wellington Dinner
Ingredients:
• 2 Meridian Wellingtons
• 1 lb asparagas
• 4 Meridian prawn skewers
• 1 egg
• 1/2 lemon
• 2 Tbls Meridian olive oil
• Salt & Pepper to taste
• Garlic powder

Directions:
1 Preheat oven to 375 degrees F.
2 Place wellington’s, asparagus and prawn skewers on baking sheet
3 Beat egg in a bowl and brush the egg onto the wellington’s (this will give the pastry a golden brown finish)
4 On the asparagus drizzle olive oil and squeeze juice from 1/2 lemon then season with with salt, pepper and garlic seasoning.
5 Bake for 25-30 minutes (until the internal temp of the salmon and beef is approx 130). Prawn skewers can be removed after 15-20 min or added after wellingtons and asparagus have cooked for 10 minutes.

Strawberry Salad 🍓Healthy, beautiful and delicious

Ingredients:
Arugula lettuce (or spinach)
Feta or goat cheese crumbled
Chopped strawberries
Chopped English cucumber
Chopped green onion
Chopped fresh mint leaves
Walnuts or pecans
Poppy seeds

Salad Dressing:
1/3 cup Meridian olive oil
2 Tbls Meridian honey
3 Tbls Apple cider vinegar
Juice from 1/2 an orange
Handful of mint leaves
Salt to taste

Directions:
1. Put Salad ingredients in a large bowl.
2. Place dressing ingredients in a blender and blend til smooth.
3. Pour dressing over salad and top with poppy seeds.
