Tender Green Beans with Shallots & Pancetta

Tender green beans and crispy pancetta come together in this amazing side!

 1 lb green beans
 80 g pancetta, cut into cubes
 2 shallots, thinly sliced
 3 tbsp butter
 salt & pepper

Boil green beans in salted water until they are tender (approximately 4-6 minutes).

Remove beans from heat and add to an ice bath.

Panfry pancetta and shallots in butter until pancetta is crispy and shallots are fragrant.

Drain green beans and add to the pan and coat with butter, shallots, and pancetta.

Season with salt and pepper to taste.
