Rich & Light Stuffed Sole

This one is really good for your 'sole'.

 1 lb sole fillets (cut into 4 fillets
 ¼ cup mushrooms, finely chopped
 1 cup tomatoes
 1 tsp butter
 6 tbsp bread crumbs
 1 tsp lemon zest
 ½ cup chicken stock
 salt & pepper to taste
 paprika

Preheat oven to 350F

Saute mushrooms in butter for 5 minutes

Mix the tomatoes with the mushrooms, bread crumbs, lemon zest, salt and pepper

Spread mixture on the fillets and roll up tightly

Place the rolled fillets close together in a baking dish and cover with chicken stock

Season well with salt and pepper

Top with a sprinkle of paprika

Cover and bake for 20 minutes
