Lemon Grilled Asparagus

Zest up your asparagus with this simple BBQ recipe.

 4 lbs thick asparagus spears
 1 ½ tbsp extra-virgin olive oil
 ¾ tsp kosher salt
 ½ tsp pepper
 zest of 1 1/2 medium lemons
 1 tsp lemon juice

Set your grill to medium-high. Shave asparagus stalks with vegetable peeler, laying stalks flat against work surface to keep them from breaking under the pressure. Break off woody lower stems. Toss stalks gently with oil, salt, and pepper.

Lay asparagus on cooking grate and grill, covered. Turn often until lightly browned and tips are crisp, 5 to 10 minutes. Serve warm and seasoned to taste with lemon zest, juice, a little more oil, salt, and pepper.
