Slice the honeydew into 1" chunks & spread on a baking sheet
Place in freezer for 4-6 hours, until frozen
Once frozen, put honeydew, honey and lemon juice in a blender
Blend until smooth (adding water if needed)
Put back into freezer for 30 minutes until the mixture sets
Scoop & serve
