This classic pico de gallo is the perfect condiment.
Place chopped garlic and onion in a strainer, and pour 2 cups boiling water over them. After draining, allow garlic and onion to cool.
Combine garlic and onions with tomatoes, jalapeño peppers, cilantro, and lime juice. Add salt and pepper to taste.
Refrigerate for at least 2 hours before serving.
